Ok so yesterday was a typical week-day at home. (I have very few classes at the moment as we are nearing the end of the year... Hooray!)
I'm trying to watch my nutrition at the moment so I had a one Weetabix with a hand full of All Bran, a sprinkle of brown sugar and some skimmed lactose free milk. I've just switched back to this milk as I am really lactose intolerant at the moment. Everytime I chance eating something milky I just suffer so much pain afterwards. The annoying thing is though that here in France they're quite behind on dairy-free alternatives (and I'm not a soya/almond/rice milk lover, I've really tried but....no.) So, I've had to settle for Matin Legèr skimmed milk without lactose which is of little pleasure for me but hey!
Lunch was leftover beef stir-fry! Receipe will be up next week. It's quite quick to make and you never feel uncomfortably stuffed afterwards and it heats up great for leftovers
Snack was a Nespresso coffee, a mini crunchie (thanks to my sisters who brought me a care package during their last trip) and four dates. Little word about dates, they are quite simply AMAZING! Nutritious and delicious goodness, they taste great, give you that so desperately needed sugar boost and keep you going right through to dinner without the guilt.
Supper; we like to keep it light in the evening so it was a bowl of homemade veggie soup with crusty French bagette of course, I batch make the soup, keep half of it in the fridge and the other half is popped in the freezer. Monday through to Thursday this is our go to supper, it means that after a long day there's no preparation involved and you know what you're having. And also we look forward to Pizza night on Fridays all the more!
So, there it was, I'm really going to challenge myself to eat more "clean" from now until my trip home in early July, so that I can feel my best for my friends wedding.
